Thumb Bread® was created by the Esendemir Sisters, Fusun, Gonca, and Arzu, who joined together to save their sick father's life. The sisters created the bread to make sandwiches and serve along their salads and soups in their fresh casual Mediterranean concept, Flatbread Grill®.
Fusun, Gonca, and Arzu Esendemir fused their love of food, traditional Turkish recipes, and lessons learned watching their immigrant parents run restaurants growing up to develop Flatbread Grill®. They developed the menu, designed the interior, oversaw the buildout, and ran the restaurant locations together. The Esendemir Sisters are the first Turkish-American women in the world to start and expand a restaurant concept. Flatbread Grill® has received an outstanding review in The New York Times and has been featured in multiple trade publications for the sisters’ industry expertise.
